Red Grouper

Red Grouper are found in many areas of the world. They are very popular in Florida, plus, they can also be found in the western Atlantic Ocean from Massachusetts, throughout the Gulf of Mexico, the Caribbean Sea and all the way down the South American coast to the southern tip of the continent. They are also found in the waters of Indonesia, South-East Asia, and off the southwestern coast of Africa.

The major commercial exporters of this fish are The United States, Mexico, Brazil, Venezuela, Argentina, and South Africa, Indonesia as well as the countries of South-East Asia. The major consumers of Red Grouper are The United States, Japan, France, Spain, Portugal and Italy. 9 million pounds of Red Grouper are harvested in the United States alone, each year.

Red Grouper over the age of 6, live offshore with adult Red Grouper. They are bottom dwellers, often living in 300 feet of water. Red Groupers under the age of 6 live in inshore reefs.

The world record Red Grouper was caught in the state of Florida and weighed 42 lb., 4 oz. They are more commonly caught at around 15#. Red Grouper can live as long as 25 years.

This Grouper spawns in April and May. Red Grouper are hermaphrodites. They are all born as females; however, as they grow older, some change sexes and become male. This species has truly been over fished, and is nearly non-existent in many regions where it was once abundant. The United States has placed strict guidelines on catches, which have helped to maintain the population in US waters. Gag Grouper is commonly substituted for Red Grouper, as Red Grouper is often in short supply.

Red Grouper has very high mercury content. It is suggested that healthy adults not consume more than 2, three ounce servings of this fish during a month.

Red Grouper is popular with chefs, as it is usually several dollars less per pound than black grouper. It has been my experience that red grouper tends to have more parasites in the flesh than black grouper. The flesh is very similar, and can be treated in the same way as Black Grouper.
