Hamachi (Japanese Amberjack)

Hamachi is almost synonymous with Sushi. The Japanese Amberjack can be found in the wild in the Northern Pacific around the Japanese Islands, the Korean Peninsula, as well as around the Hawaiian Islands. In the wild, the fish can grow to a length of 5 feet, and weigh as much as 88#.

 

A fast growing fish, about 120,000 tons are farm raised each year. Each may, fish farmers go out in search of small fry called mojako that find shelter in seaweed. The farmer takes the seaweed with the majako, and puts it into cages in the ocean, and waits for the fish to reach 10-50 grams (1/2 – 2 ounces). The fish are then sold again, and allowed to grow to 3 kg (a little more than a pound), called Hamachi, or 5 kg (about 2 1/2 #) called Buri.
