The name comes from the Greek “Chryso,” meaning “golden.” Juveniles live inshore in grassy areas away from predators. Adults move offshore and can be found in 30-230 feet of water over sandy areas and reefs.
The greatest numbers of Yellowtail Snapper are found in the Bahamas, South Florida and the Caribbean Sea. They can be found all over the Gulf of Mexico, as far north as Massachusetts, east to Bermuda and as far south as Brazil.
Most mature Yellowtail average about 3 pounds in size although some grow as large as 5 pounds and 30” in length. The record in the state of Florida is 7lb. 5 oz.
Yellowtails spawn all year long at different times, depending on the location. The spawning slows when the water temperature is cooler. Like other snapper, they release their eggs into the open ocean. A small droplet of oil inside the egg makes the egg buoyant so it floats to the top of the water, where it is carried by the tides. The eggs hatch within 24 hours of being fertilized.
This species of snapper is sexually mature when it reaches around 10-12” in length. Most live anywhere from 6 to 14 years, and swim in small schools. They are nocturnal predators, feeding on crab, shrimp, cephalopods, worms and other smaller fish.
Predators of the Yellowtail are sharks, barracuda, mackerel, grouper and other species of snapper.
Yellowtail Snapper are an important game and commercial fish. Most are harvested commercially by shrimp trawlers.
Yellowtail are excellent when fried whole. They can also be roasted & sautéed. The flesh is tender with a mild flavor.
