Dover sole are right-eyed flatfish. Like all other flatfish, they begin life swimming upright. As they get older, they turn so that instead of swimming vertically, they swim horizontally. As this happens, the eye migrates to the top side of the body.
Dover sole are found in particularly high numbers in the British Isles; however their range goes from the North and Baltic Seas, throughout The Mediterranean as far south as the Cape Verde Islands.
Dover Sole reach a maximum size of just over 2’ in length and weigh about 6 pounds. They can live as long as 26 years. They are a highly important fish commercially. They are also excellent candidates for aquaculture, as they repopulate in about 1-4 years.
Dover Sole are usually solitary, living in shallow water down to about 450 feet. They burrow into sandy or muddy bottoms, where they feed at night on worms, mollusks and other small crustaceans.
Dover Sole is a very delicate white meat fish. Traditionally it is either shallow poached, or Sautéed.
