Escolar

Lepidocybium flavobrunneum

 

Escolar is an open sea fish, and is caught commercially as a bi-catch of tuna. It is sometimes referred to as “white tuna,” however it has no relationship to Tuna.

 

Escolar are about 6’ in length, and can reach 60-80#.

 

There is a lot of controversy over this fish. The FDA actually banned this fish in 1990. Studies discovered that the fish is toxic, after a great number of people became ill after consuming it. The ban has since been lifted. Escolar is not toxic, however, it does contain a very high level of wax ester oils, which the human body can’t digest. The oil quickly makes its way through the body causing diarrhea in many people.

 

If consumed, it is recommended that only a small portion be eaten.
