Turbot are left eyed flatfish native to the waters of the North Atlantic. European Turbot can be found in sandy, or gravel shallow bottoms close to shore. They can be found throughout the Mediterranean, Baltic and Black Sea. This species can reach 30-40#.
Turbot is a valuable commercial fish, as it has a very desirable flavor. It also lends itself well to aquaculture. Currently, France, Spain, Chile and Norway are the leading countries that farm raise Turbot.
The Greenland or “Blue Turbot” can be found at depths of 3000 feet.
They get their name from the Greek; skopein, to look and opthalmos, eye.
