We get our frog legs from Lake Okeechobee, Florida. We have a guy that goes out there every night and goes "gigging" for them while he catches our catfish. Gigging is when you see the frog, and you stab it quickly to catch it.
Frog legs are eaten by many different cultures around the world. Although Frog Legs really aren't all that common in French kitchens, the English began calling the French "Frogs" as a derogatory term year and years ago, and the name has kind of stuck.
There is no reference to Frog Legs in early American cook books, so it isn't possible to give anyone credit for putting them on American tables. They are more popular in the southern United States, where they are mostly fried, or sauteed.
Once people try them, they like them. Most people say they taste like chicken. I don't know whether or not I would make that comparison, however, they do have a mild flavor. They tend to be a little dryer than chicken, but very tasty.
