A very popular and healthful mushroom, Maitake has a rich woodsy taste, crisp texture and an excellent aroma. Maitake are also known as Hen of the Woods, Dancing Mushroom, Grifola frondosa and sheepshead. Sauté them in olive oil and a little butter, good in stew, spaghetti sauce and in stir-fry. Florence Fabricant, the food editor of the NY Times says Maitake mushrooms are "quite meaty, with a delicately nutty flavor, and holds its shape and crisp texture extremely well in the sauté pan, and doesn't sop as much oil as other mushrooms." Their unique aroma and crunchy texture make them a perfect match for any type of cuisine
Storage: If you do not use in a week, just clean, slice, put on a cookie sheet in the freezer until they are frozen through, then put in freezer bags for later use.
Note: Use caution when trying this species for the first time: some individuals report allergies to Maitakes. Try only a bite or two if you have never eaten them before
